Parmigiano Reggiano DOP is a unique cheese with a history stretching back thousands of years: produced as far back as the Middle Ages on monastery farms, thanks to its ability to keep for a long time, it was marketed throughout the Mediterranean as early as the 13th century. Even today, as in ancient times, it is still produced without additives, in a completely natural way, as illustrated during the guided tour of the Borgotaro cheese factory.
The DOP label guarantees that Parmigiano Reggiano is produced, processed, and prepared exclusively in a specific geographic area in Northern Italy, which includes the provinces of Parma, Reggio Emilia, Modena, and parts of Bologna and Mantova. This certification is intended to preserve traditional methods and ensure consistent quality.
